Any Suggestions for Easy, Succulent Tapas

Les, who has a bar, wants to do a Spanish tapas night and wanted some suggestions. The most typical tapas in the bars here in Spain are the Spanish potato omellette cut into cubes, squid (calamar), octopus, muscles and 'pisto manchego'.

Being as the last one is easy to describe, I'll do it for you here to get you started.

Ingredients:
  • 800 grs. of red and green peppers
  • 100 grs. tomato sauce
  • 1 onion
  • 40 grs. olive oil
  • salt and pepper
Preparation:
Wash the peppers, take out seeds and cut in strips. Chop up the onion. In a clay recipient heat the oil and add the peppers, salt and pepper to taste. When the pepper are getting soft, add the onion in the middle of the recipient ( don't mix yet) and do until soft. Then mix the peppers, onions and tomato sauce and let cook for about 10 mins on a very low fire. This is usually served on small pieces of italian bread.
